Common Name: Sage
Habit: Sage is a Mediterranean native with grey-green leaves up to 6cm x 2.5cm covered in a fine hair which gives them their silvery appearance. This shrub is wider than it is tall growing up to 70cm high and 1m across with the leaves on woody stems.
Flowers: In early to mid-summer flower spikes appear with lavender-purple blooms on them making them both ornamental as well as a culinary favourite in the garden. The leaves have many uses in the kitchen with their savoury slightly peppery flavour.
Care: Plant in full sun where possible as this herb has its best flavour with more light. Ensure soil is well drained, mix sand into clay type soils to aid drainage, Sage can tolerate alkaline soil but not wet winters. Frost does not seem to be a problem but in very hot climates Sage is treated as an annual.
